Ingredients (2–3 servings)
For Kadai Masala (roast & grind):
- 250 g Button mushrooms (finely chopped)
- 2 Medium onions (finely chopped)
- 2 Tomatoes (finely chopped)
- 2 Green chilies (finely chopped)
- 1 Capsicum (optional, finely chopped)
- 1 tbsp Ginger-garlic paste
- 2 tbsp Oil / Ghee / Butter
- Salt to taste
- Fresh coriander (for garnish)
Spice Powders
- ½ tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tsp Coriander powder
- ½ tsp Garam masala
- ½ tsp Cumin seeds
Method

Prep Mushrooms:
- Wash and pat dry mushrooms. Chop them finely (almost minced style).

Cook Base:
- Heat oil/butter in a pan.
- Add cumin seeds, let them splutter.
- Add onions & green chilies, sauté till golden.
- Add ginger-garlic paste, fry till raw smell goes.

Tomato & Spices:
- Add chopped tomatoes, cook till soft & mushy.
- Add turmeric, red chili, coriander powder, and salt. Cook till oil separates.

Add Mushrooms:
- Add finely chopped mushrooms (and capsicum if using).
- Stir on high flame – mushrooms will release water, cook till dry and nicely coated with masala.

Finish:
- Sprinkle garam masala. Mix well.
- Garnish with fresh coriander leaves.
