mushroom-bhurji
Ingredients (2–3 servings)

For Kadai Masala (roast & grind):

  • 250 g Button mushrooms (finely chopped)
  • 2 Medium onions (finely chopped)
  • 2 Tomatoes (finely chopped)
  • 2 Green chilies (finely chopped)
  • 1 Capsicum (optional, finely chopped)
  • 1 tbsp Ginger-garlic paste
  • 2 tbsp Oil / Ghee / Butter
  • Salt to taste
  • Fresh coriander (for garnish)

Spice Powders

  • ½ tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • ½ tsp Garam masala
  • ½ tsp Cumin seeds
Method
  1. Prep Mushrooms:
    • Wash and pat dry mushrooms. Chop them finely (almost minced style).
  2. Cook Base:
    • Heat oil/butter in a pan.
    • Add cumin seeds, let them splutter.
    • Add onions & green chilies, sauté till golden.
    • Add ginger-garlic paste, fry till raw smell goes.
  3. Tomato & Spices:
    • Add chopped tomatoes, cook till soft & mushy.
    • Add turmeric, red chili, coriander powder, and salt. Cook till oil separates.
  4. Add Mushrooms:
    • Add finely chopped mushrooms (and capsicum if using).
    • Stir on high flame – mushrooms will release water, cook till dry and nicely coated with masala.
  5. Finish:
    • Sprinkle garam masala. Mix well.
    • Garnish with fresh coriander leaves.
