Ingredients:
• 2 cups cooked rice (cooled)
• 1 cup mushrooms (sliced)
• ½ cup chopped spring onions, carrots, capsicum
• 2 tsp soy sauce, 1 tsp vinegar
• Salt, pepper, 2 tbsp oil
Steps:
1. Heat oil in a wok; add mushrooms and sauté till browned.
2. Add chopped veggies and stir-fry on high flame.
3. Add rice, soy sauce, vinegar, salt, and pepper.
4. Toss well on high heat for 2–3 minutes; serve hot.
